How to make sugar free carrot cake Sugar free carrot cake recipe Ingredients: 2 Cups grated carrots 6 Egg whites 1 Cup Splenda brown sugar 1 Cup unsweetened applesauce 1 Cup milk (1 or 2%) 1 1/2 Teaspoon vanilla extract 1 Teaspoon ground nutmeg 2 Tablespoons ground cinnamon 2 Teaspoons baking soda 2 1/2 Teaspoons baking powder 3 Cups whole wheat flour 1/4 Cup chopped pecans (optional) 1/2 Cup raisins (optional) Preheat oven to 350 degrees. In a large bowl beat 6 egg whites, then beat in brown sugar, applesauce, milk and vanilla. Stir in the nutmeg, cinnamon, baking soda, baking powder and flour. Lastly stir in the carrots, pecans, and raisins. Grease a 9X13 inch cake pan and pour cake mixture into the pan. Bake for 35-40 minutes or until a inserted toothpick comes out clean. Cool and serve. Greetings! Time for some monkey bread! Had to share this one with you. Super easy, inexpensive and delicious. Even if it doesn’t come out of the pan in one beautiful piece, don’t worry, eat it and you won’t even care. If you don’t have an angel food cake pan you can use a tube pan, or bundt pan. No worries, use what you have. Even a loaf pan or two would work. Add in some raisins and some nuts and you have a delicious alternative to more complicated sticky buns but its fancier than just using the refrigerator cinnamon rolls.
